When it comes to Italian sparkling wines, Franciacorta and Trento DOC immediately come to mind, but there are other important sparkling areas that are often underestimated: Oltrepò Pavese and Alta Langa. Today we want to talk to you about this small piece of Italy where Lombardy, Liguria, Piedmont and Emilia cross, combining their different landscapes, culture and history: Oltrepò Pavese. It is the place where Pinot Noir has found its ideal habitat here and represents approximately 75% of the entire national production of the vine. The Oltrepò Pavese Metodo Classico DOCG is a sparkling wine whose production is allowed in the province of Pavia, from Pinot Nero (at least 70%), Chardonnay, Pinot blanc or Pinot gris grapes.

On the gentle narrow hills between Piedmont and Emilia, south of the river Po, there is a XII century castle where Gian Marco and Letizia Moratti cultivate their passion for wine: the Castello di Cicognola. The knowledge of the terroir and the great work in the vineyard and in the cellar, under the direction of the oenologist Riccardo Cotarella, ensure that the vines grown can best express their potential and organoleptic qualities. Important investments in the vineyard and in the cellar have transformed the ancient castle into a landmark of excellence. This is how, soon, the best awards came from the most prestigious Italian wine guides.

If you say Oltrepò Pavese think of the Classic Method sparkling wines based on Pinot Noir, vinified in white, but above all the large rosé sparkling wines. This is the case of More Rosè, 100% pinot noir 36 months sur lie, which shows off with its fine and persistent perlage and the intense aromas of berries and small red fruits. At the sip it is very pleasant and has an incredible drinkability, so much so that we went from a taste to finishing the bottle without realizing it.
It can accompany a beautiful fish dinner entirely, but we have combined it beautifully with fantastic grilled prawns.
